~ Roasted Almonds with Honey & Fennel ~
She created magic in a saucepan, swirling in golden threads of honey with white crystals of sea salt, one sweet, the other not, balancing life’s two halves. It was her mother’s recipe, prepared in the cold winter months, a source of warmth and comfort. Now as she rebuilt her own life, putting it together piece by piece, she could think of no better beginning.
In a saucepan, add two tablespoons of honey to one tablespoon of water. Add a teaspoon of sea salt, and chilli-flakes (optional). To this mix, add two cups of almonds, and two teaspoons of fennel seeds. Preheat oven at 160C and line a baking dish with baking paper. Pour the mixture into the dish, make sure to spread it out. Leave in oven for 30 minutes. Once ready, cool before devouring.
